Chocolate Chip Cookies
Sometimes you just need a taste of childhood comfort and that's where Chocolate Chip Cookies always come in for me!
We made a lot of cookies during the holidays which were cute and delightful but nothing really transports me back to my kitchen in the 90's with my JTT posters and Dr. Pepper flavored lip-smacker quite like chocolate chip cookies.
At Meals and Memories with Nonno, we certainly believe that food's main requirement is to nourish us but it's exciting that it can also evoke certain memories that require the sense of taste to be reached which can actually be beneficial to your mental health!
In a sense, you're able to take yourself to a time where you felt more care-free or at ease or maybe even connected to a loved one who has passed on, and that's almost like a form of meditation in our opinion.
It's also important to remember you can enjoy mostly everything in life in moderation! If you feel like your self-control is weakened by how amazing these cookies are (ahem, it me) then consider giving some to a friend or neighbor! After all, who doesn't love to get surprise homemade chocolate chip cookies?
For these cookies, we used a cooking tip from Allrecipes.com about dissolving the baking soda in warm water before adding to the mix. We aren't totally sure if it makes a big difference but these cookies turned out sooo good that we definitely recommend trying it!

You will need:
-1 cup butter (2 sticks)
-2 eggs
-1 cup of white sugar
-1 cup of brown sugar
-3 cups of flour
-1 tsp baking soda (dissolved in 1 tsp of water)
-1/2 tsp salt
-2 tsps vanilla extract
-2 cups of chocolate chips
INSTRUCTIONS:
1) Set oven to bake at 350*
2) Add white sugar, brown sugar and butter to a bowl and mix until smoothly blended.
3) Beat eggs and mix in.
4) Stir in vanilla extract.
5) Add dissolved baking soda and salt and stir well.
6) Add flour and mix well.
7) Add chocolate chips. You can do more or less than 2 cups, however much chocolate you prefer!
8) Scoop into balls and place on baking sheet about 1.5-2 inches apart (I like to use parchment paper and an ice cream scooper for this step but it's not necessary)
9) Cook for 12-15 minutes, depending on size of cookie.
10) Let cool before serving.
NONNO'S TIP: Cover cookies with a clean dish towel shortly after cooling to lock in moisture!
